RESIDENCE at the Potter is a dining experience built on passion, innovation, and a deep respect for the hospitality industry.
Founded by industry veterans Nathen Doyle and Cameron Earl, our venue is more than just a restaurant, it is a living "thesis" on what modern hospitality can be.
We operate on a unique Chef-in-Residence model. Every 12 months, we hand the keys to a new culinary talent, giving them the platform, infrastructure, and mentorship to launch their own fully realised restaurant concept within our walls.
Our mission is simple:
Education: to train and inspire the next generation of industry leaders.
Innovation: to provide a risk-free incubator for chefs to test bold new ideas.
Service: to deliver a "quietly elegant" experience that celebrates our guests and our produce.
We are looking for a visionary culinary talent, a Senior Sous or Head Chef ready to step out of the shadows, to take over the RESIDENCE kitchen for a 12-month tenure starting July 2026.
THE DEAL
This is not a standard employment role. It is a creative commission.

How to Apply
The selection process is designed to be fair, and revealing of your potential as both a cook and a business operator.
The Process:
STAGE 1: The Concept Deck Submit your initial online application. We want to see your "Thesis"
a concept deck outlining your proposed restaurant theme, culinary philosophy, and why you are ready for this residency.STAGE 2: The Defense Shortlisted applicants will be invited to present their vision. This stage involves menu creation, a full costing exercise to demonstrate commercial acumen, and an interview to discuss your leadership style.
STAGE 3: The Offer A final interview with the founders to align on values and vision, followed
by a formal contract offer for the 2026/27 Residency.
